Mix in the frozen cubed potatoes and half a cup of shredded cheddar cheese.

Season the mixture with salt and black pepper to taste, then stir thoroughly to combine all ingredients evenly.

Transfer the mixture to a greased 9 by 13-inch casserole dish and spread evenly. Sprinkle the remaining shredded cheddar cheese over the top and cover with aluminum foil.
