Crack the eggs into a bowl, add milk, salt, and pepper. Beat until fully combined.

In a small non-stick skillet over medium-low heat, melt 1 tablespoon of butter. Add the eggs and scramble for 3–4 minutes until just set but creamy. Set aside to cool.

Separate the crescent dough into 8 triangles and place on a flat surface.

Place a spoonful of scrambled eggs, one sausage link, and half a slice of cheese on each triangle. Roll from the wide end toward the tip to enclose filling.

Place roll ups seam-side down in the air fryer basket. Cook at 370°F (188°C) for 7–9 minutes until golden brown and crisp.

Melt the remaining tablespoon of butter and stir in maple syrup to form a glaze.

During the final 2–3 minutes of cooking, brush the tops of the roll ups with maple butter glaze.

Remove from air fryer and let cool for 2–3 minutes. Serve warm.
