Preheat the oven to 400°F (200°C). Wash and halve or quarter the baby potatoes. Slice the smoked sausage into 1/4-inch rounds.

In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper. In a large bowl, toss the potatoes with olive oil and half of the seasoning mixture until evenly coated.

Line a baking sheet with parchment paper or lightly grease it. Spread the seasoned potatoes in a single layer and scatter the smoked sausage slices evenly over the potatoes.

Bake for 35-40 minutes, stirring halfway through, until potatoes are golden and tender.

Remove from oven, sprinkle shredded cheddar cheese evenly over the potatoes and sausage, then return to oven for 5 minutes or until cheese is melted and bubbly.

Remove from oven, garnish with chopped parsley, and serve hot with optional sour cream.
