03 - 1 pound Yukon Gold potatoes, cut into 1/2-inch cubes

06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon sea salt, plus more to taste
08 - 1/4 teaspoon ground black pepper, plus more to taste
09 - 1 1/4 pounds sirloin steak, cut into 1/2-inch cubes

# Step-by-Step Instructions:

01 - Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of the ghee. Allow to melt and coat the surface.
02 - Add cubed potatoes and season with garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes undisturbed, then stir every 1–2 minutes until golden and fork tender, about 8–10 minutes.
03 - Remove cooked potatoes and browned bits from the pan. Set aside to avoid overcooking while preparing the steak.
04 - Increase heat to medium-high. Add remaining ghee. Once melted, add steak cubes. Season lightly and sear undisturbed for at least 2 minutes. Stir and cook another 1–2 minutes until browned.
05 - Return potatoes to the skillet with steak. Stir to combine and adjust seasoning if needed. Garnish with freshly chopped parsley and serve immediately.
