In a large pot, cook the pasta al dente according to package instructions. Drain and return to the pot. Keep warm.

In a large skillet over medium-high heat, cook sausage until no longer pink, about 4 to 6 minutes. Remove from skillet, slice into 1-inch rounds, and set aside.

Return pot with pasta to low heat. Stir in minced garlic, fresh baby spinach, Kalamata olives, sun-dried tomatoes, and cooked sausage slices. Heat through, allowing spinach to wilt slightly.

Remove from heat. Gently stir in crumbled feta cheese. Serve immediately, optionally garnished with lemon wedges, black pepper, or grated Parmesan.
