01 - 3 cups uncooked smart spiral pasta (rotini)

→ Protein

02 - ¾ pound Italian turkey or chicken sausage, casings removed

→ Vegetables and Flavorings

03 - 2 garlic cloves, minced
04 - 5 ounces fresh baby spinach (approximately 5 cups)
05 - ½ cup pitted Kalamata black olives
06 - ⅓ cup julienned oil-packed sun-dried tomatoes, drained and chopped

# Step-by-Step Instructions:

01 - In a large pot, cook the pasta al dente according to package instructions. Drain and return to the pot. Keep warm.
02 - In a large skillet over medium-high heat, cook sausage until no longer pink, about 4 to 6 minutes. Remove from skillet, slice into 1-inch rounds, and set aside.
03 - Return pot with pasta to low heat. Stir in minced garlic, fresh baby spinach, Kalamata olives, sun-dried tomatoes, and cooked sausage slices. Heat through, allowing spinach to wilt slightly.
