Place chicken breasts in the bowl of a food processor and pulse until finely diced. Alternatively, finely dice the chicken by hand.

Transfer diced chicken to a large bowl. Add eggs, mayonnaise, parsley, chives, basil, salt, garlic powder, black pepper, dill weed, flour, and shredded Mozzarella. Mix until fully incorporated.

Use a ¼ cup measuring cup to portion out 15 equal mounds of the chicken mixture.

Heat 1 tablespoon olive oil in a large skillet over medium heat. Place half the chicken mounds in the pan, spacing them apart. Flatten each into a patty with the back of a spoon. Cook 3-4 minutes per side until golden and cooked through. Transfer to a plate.

Add remaining tablespoon of olive oil to the skillet. Repeat cooking process with remaining chicken mounds. Transfer cooked fritters to serving plate and keep warm.

Serve fritters warm, optionally with aioli, on a bun, or over salad.
