Prepare the crinkle cut fries according to package instructions.

Heat olive oil in a large skillet over medium heat. Add ground beef and sliced onion, breaking up the meat as it cooks.

In a small saucepan, whisk together the brown gravy mix with 2 cups of water. Cook over medium heat, stirring occasionally until it boils and thickens. Reduce heat to simmer.

Once beef is browned, stir in taco seasoning and 1/4 cup of water. Reduce heat and let simmer.

Allow the gravy and seasoned beef mixture to simmer for about 5 minutes.

Layer cooked fries on a serving plate, top with a portion of the beef mixture, sprinkle with Tex Mex cheese, and ladle hot gravy over the top.
