Evenly sprinkle Swiss and mozzarella cheese over entire tortilla. On one half, layer the chopped turkey, cranberry sauce, and chopped herbs.

Cook until cheese begins to melt, then fold the tortilla in half gently.

Grill the folded quesadilla on each side until golden brown and crisp, approximately 2–3 minutes per side.
