Preheat the oven to 400°F. Lightly grease a baking dish with non-stick cooking spray. Brush both sides of the chicken breasts with olive oil and season with salt and pepper.

In a small bowl, mix together brown sugar, water, garlic powder, dried thyme, salt, and ground black pepper until combined.

Place the seasoned chicken breasts in the prepared baking dish and pour the brown sugar mixture evenly over the top.

Bake for 20–25 minutes or until the chicken reaches an internal temperature of 165°F as measured with a meat thermometer.

Remove from the oven and transfer to serving plates. Spoon the pan sauce over the chicken. Optionally, drizzle over rice or pasta.
