Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.

Lay one tortilla flat. Place two provolone slices on half of the tortilla, add shredded beef, then a layer of French fried onions. Roll tightly, tucking in sides, and brush inside edge with olive oil to seal.

Place roll ups seam-side down on the baking sheet. Brush tops and sides with remaining olive oil. Bake 8 to 10 minutes until golden, crisp, and cheese is melted.

Combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Simmer over medium heat for 3 to 4 minutes.

Let roll ups rest 2 minutes. Slice into halves or thirds and serve warm with au jus for dipping.
