In a large skillet over medium heat, cook ground beef and chopped onions until the beef is no longer pink, about 8–10 minutes. Drain any excess fat.

Transfer the beef mixture to a 9.5-inch pie plate, spreading evenly. Sprinkle the salt over the meat.

In a medium bowl, whisk together coconut flour, almond flour, and baking powder. Add almond milk and eggs, then whisk until the batter is smooth and well combined.

Pour the batter evenly over the meat layer in the pie plate, allowing it to slightly soak in.

Sprinkle 1 cup of shredded cheese on top. Bake for 25 minutes, or until the center is set and the top begins to turn golden.

If using tomato slices or additional toppings, remove the pie after 25 minutes. Add the tomato slices and remaining 1/2 cup cheese, then return to the oven for 5 minutes until melted and bubbly.
