Heat a large cast iron skillet over medium heat for 2 minutes. Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter. Once melted, add Yukon Gold potatoes and season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper. Reduce heat to medium-low, cover, and cook for 10 to 12 minutes, stirring occasionally until the potatoes are tender and golden brown.

While potatoes cook, season sirloin cubes with ½ teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder evenly.

Push the cooked potatoes to one side of the skillet or remove if concerned about burning. Add remaining 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the empty side. Increase heat to medium-high. Add steak bites and sear for 3 to 4 minutes per side until browned and cooked to desired doneness. Cook in batches if the pan is crowded, removing potatoes if necessary to prevent burning.

Lower heat to medium-low. Add extra garlic butter if desired and allow it to melt, coating the steak bites and potatoes. Toss gently to ensure even coating and a glossy finish. Adjust seasoning to taste before serving.
