→ To Serve

20 - 8 skewers
21 - 8 small flatbreads or 4 large, warmed
22 - Shredded red cabbage, carrot, and mint salad

# Step-by-Step Instructions:

01 - Combine all yogurt sauce ingredients in a bowl, mix thoroughly, and refrigerate for at least 20 minutes to develop flavors. Overnight refrigeration is ideal.
02 - Grate the onion directly into a mixing bowl. Add ground lamb, panko breadcrumbs, crushed garlic, chopped coriander, and all spices. Mix thoroughly with your hands until evenly combined.
03 - With damp hands, divide the mixture into 8 equal portions. Mold each portion onto a skewer, forming smooth or textured shapes according to preference.
04 - Heat 1/2 tablespoon oil in a large skillet over medium-high heat. Cook koftas in batches, turning frequently, for a total of 5 minutes until evenly browned.
05 - Grill koftas on medium-high heat for approximately 6 minutes, rotating to achieve an even char.
06 - Preheat broiler and place koftas about 10 inches from the heat source. Broil for 12 minutes, turning as needed until lightly browned.
07 - Arrange flatbreads, yogurt sauce, and cabbage salad on a platter for a DIY serving style. Spread yogurt sauce on flatbread, add salad and koftas, then drizzle more sauce before folding and enjoying.

02 - Variation in shaping koftas includes balls, cylinders, or the traditional elongated football shape.
03 - Versatile serving options include wraps with flatbreads or serving alongside rice pilaf and salads.
